One thing I would love out of a new ore is one that introduces magnetism into the game.
Magnetite is the most magnetic material on Earth, it is found in iron ore. There is a chance to obtain 1-3 chunks of magnetite from mining an iron ore. You would need 8 magnetite chunks surrounding an iron ingot to make a magnetite block.
A block of magnetite is basically a magnet. It brings in any ferromagnetic materials that are dropped on the ground. The ferromagnetic materials include magnetite, iron, redstone, and netherite.
The force of the magnet gets bigger when there's more added magnetite blocks, it can get to the point where it drags in players wearing a ferromagnetic armor, and iron golems. The iron golems would hit at the magnet it gets sucked into until it breaks, avoiding the possible abuse of iron farming.
A line of magnetite blocks can also serve as a conveyer belt, as the ferromagnetic material can be carried in any direction if the magnetite blocks were controlled with redstone. It destroys any nearby redstone dust, however. Involving different strategies if the player wanted to use magnetite in a redstone build.
Wearing ferromagnetic boots like iron and netherite can cause the player to walk and run on walls made of magnetite blocks. However walking and running on them increases the wear down of durability.
