These structures were added in the earliest days of minecraft, but as we will likely update these two structrures anyway (we already have done so to the mineshaft,) why not revamp the entire thing as well?
Proposed Mineshaft Changes: They could be made out of Jungle Wood in Lush Caves, and there might be some cauldrons in Dripstone caves mineshafts. Deep Dark Mineshafts might generate more wool in their loot chests. The Mineshaft Loot tables should also be updated to include Copper, Amethyst, and etc. One other thing that would be cool is if there could be some lanterns integrated in the lighting along with torches. Maybe there could be random holes in the walls made of 3-10 blocks as if ore was once there?
Proposed Stronghold Changes: Below y0, all strongholds should be made up of grimstone. Infested Grimstone, and mossy/cracked variants should be added because of this. All oak-related materials should generate as jungle wood when in a Lush Caves Biome. In the Deep Dark, maybe a Warden could be in one of the rooms, like a library. Don't make noise in the library! The prison cells should be updated, maybe they could generate cauldrons or chests with food like poisonous potatoes in them. Stronghold Loot Chests should generate with copper and amethyst, but we could also add lanterns to the storeroom chests. Maybe we could even add a portal room that only generates in Grimstone Strongholds that has a Ruined Portal in it? There are so many possibilities to do here!
