in the snapshots leading up to the 1.17 caves and cliffs update, we have seen the implementation of local water levels. Personally i think that now is the best time over any other to add new water generation in the world above the caves.
this new generation would include lakes and rivers as well as large waterfalls leading downstream from the mountains and out to the sea. this could add a bit more strategy to minecraft seeing as how sometimes oceans can be a bit harder to find so this would allow you to go out to sea an easy way. this could also be really cool to see waterfalls that behind them reside entrances to caves. that would be absolutely amazing to see. furthermore, it could just be extremely fun to raft down them like what was demonstrated in the announcement of 1.17. this would add a little bit more realism as well as heighten the sense of wonder and exploration to the world of minecraft.
