So you know that now there's Grimstone under y level 0? Maybe there could be a Grimstone variant of all ores so they blend into the Grimstone. (I know that this was already confirmed to change.) I know what you're thinking. You could just have all ores that generate under y level 0 be a Grimstone variant. Don't do that. What if there's andesite and then the ore doesn't fit in there? What I think is you could have it so the ore is the variant of the ore that would be the type of stone that would be there if the ore wasn't there. For example, if there was a diamond ore vein generating in the middle of some granite, and the blocks that the diamonds are in would be granite if the diamonds weren't there, then the diamonds would be "granite diamond ore". This would work with all stone types. Maybe it would also happen in the Nether with quartz and Nether Gold in Blackstone.
I also have one more suggestion. What if when you mine an ore (excluding gold, iron, and using silk touch) you would get the stone and the mineral. For example, if you found some "diorite Redstone ore", when you mine it you would get diorite and Redstone. (Please note that if you mined the stone variant of an ore, you would get cobblestone, not stone. Also note that when smelting an ore block you would not get the stone, you would only get the mineral.)
I hope these could get added because I think it would make a lot of sense.
