I love what is already there with the Caves and Cliffs update and I don't think anyone would be upset if it was left the way it is.
Like the Nether though, I feel like a fourth biome would completely satisfy everyone. The three biomes we had in the Nether were enough but the fourth biome you guys added made the whole update feel complete. It would be the same here.
And here's my idea: the Lightshroom Caverns. Exclusive to the bigger caves and caverns, large colorful glowing mushrooms would almost blanket the bottom of these semi-rare biomes. Similar to the way the Warped Forest is the Nethers' save haven, this biome would be the safest biome of the underground - axolotls attack you in the Lush Caves, stalagmites wait for you to fall on them/the other way around in the Dripstone Caves, and the Deep Dark is entirely the riskiest place to be; whereas the mushrooms in these caves are slightly bouncy and very safe to land on from any height (allowing easy access) and due to the light they give off no hostile mobs would be allowed to spawn above or under them.
This would be the safest place to be in the underground. You won't need torches here, it'd be very easy to find ores (which, to balance these places out, is exactly why these biomes would ONLY be above Y=0 where you aren't bound to find anything very useful late-game) and this would add something people have been asking about for a while; colored light.
I really think this would add to the beauty of the underground.
