After experimenting with 21w06a, I realized the new Cheese Caves cave type has a consistently high enough ceiling to allow for giant mushrooms to spawn. This could allow for an underground variant of the Mushroom Biome to spawn.
Example:

Brightness has been increased by 25% for viewing purposes.
This biome, like its surface-based predecessor, would not allow any hostile mobs to spawn in it. Meaning that this biome would offer a place of safety and refuge for long underground ventures - or a place to build without the need to worry about hostile mobs spawning close by. These biomes could spawn at any level underground below Y+52, with the probability of them spawning decreasing deeper underground.
This biome could have a higher chance of abandoned underground structures (ie: the rumored "underground cabins", etc...) to spawn, as well as the possibility of a new (blue perhaps?) mushroom and Mooshroom type to spawn. There could potentially be a low chance of very specific (and unique) loot spawning in structures in this biome, but what this loot would (or could) be, I have no clue.
