I get that Mojang wants to alter the frequency and how diamonds spawn in the new update and it can seem like a little too much. But I've been playing with the new caves in survival with friends and the way you find diamonds in the open caves is game changing. Strip mining is tiring, boring and so time consuming, whereas exploring these crazy open caves and finding a sufficient amount of diamonds without a single strip mine is the perfect way to cave. It adds more reason to explore and take risks in caves. The risk vs reward for wandering through a deep cave at -60 is a perfect balance how it is imo. There's just enough diamonds that it's fun and rewarding but there's enough mobs/danger/risk of getting lost in the caves to balance it out. Myself and my friends found we pretty much got the same amount of diamonds/time as strip mining but we were all having fun battling hordes of mobs and being blown away by the cave generation the whole time.
Summary: the way ores are spawning now in regards to depth and frequency is perfect as it is on 21w06a and I've never had more fun mining in my life.
