Basically, nerf the iron ore generation below ground or make it deeper (harder to get to) and hugely buff the iron generation up in mountains and really tall cliffs.
It makes a lot of sense because thats usually where a lot of mines and minerals are found - in mountains. To get lots of iron quickly in the late game, you would look for high terrain and find big veins of up to 24 iron ore blocks. If you have an elytra, you know where to look to stock up!
Plus Ive always found it weird how fast you go from wood to stone to iron. Early on I wouldn't really know how things worked so I was stuck with stone for hours - and it was fun! Felt a lot more challenging, a lot more like it was really survival. There's plenty of room for ores to spawn deeper now, so it's weird to see iron so soon. Iron/coal should be harder to get to in caves - getting equipped would take longer, stone would have more shelf life, the game would be more gradual and a slow burn and I bet the fear of the first night could become a thing again!
