I think it's cool how certain monsters can spawn more often in some biomes than others in the Nether, and I've always wanted to see this applied to the Overworld, and caves seem like the best place to start.
For example, you could find Spiders more often in the Lush Caves, and undead mobs would be rare in Lush Caves to match the atmosphere of the biome. Dripstone Caves may have more Creepers than usual, and maybe Skeletons would spawn more often to emphasize the danger that Dripstone poses to players.
