Slime chunks are arbitrary and dont feel consistent with how slimes interact with the swamps and moon. Plus with much larger caves, slimes will end up far to common in normal caves so they need to be moved to thier own biome.
The eclipse caves only generate beneath a swamp biome and will generally have vertical water shafts leading into the swamp. Since slimes spawn most during a full moon it begs the question where they go during a new moon or an eclipse. Simple, underground.
The caves themselves would be made of petrified eclipse (which is a hard type of stone which is slightly bouncy due to the slime seeped into it) during a new moon, slimes would spawn a incredibly high rated inside the eclipse caves and otherwise only slimes spawn in them at normal rates.
Petrified eclipse is light sensative so if light levels get too high, the collective cave reacts and emits a pulse causing any non solid blocks ie torches adjacent to the eclipse to break.
