As of now, the only available dimensions of the Minecraft world are currently 3:The Overworld, The Nether, and The End, all three surrounded by 'The Void'
A suggestion for a new 'dimension' is a Fae dimension. In folklore, the world of the Fey (fairies) is thought to be an island inhabited by not only faeries, but by gods, demons, and spirits; another reason as to why I think a Fae world would be a great dimension with its own biomes like the Warped Forest within the Nether. The colours would be diverse, ranging from dull to bright with corresponding Fae/Mobs.
Fae: passive, villager-like, that spawn ONLY in the Fae realm. Spend most of their time reading from Enchanting books or trading dimension-exclusive goods. An idea may be that if one 'steals' an Enchanted book, a Fae can sense this, and much like aggravating one zombie pigman, a herd of Fae will start charging after the player. IF the player escapes the dimension/biome, they will be well rewarded by being able to enhance their armour/weapons with more powerful enchants from the ancient Fae books
Fae may be passive, but they will defend other Fae or will attack if directly provoked by the player. They MAY drops wing material, could be used to craft hovering/flying clothing?
A way to get into the Fae dimension is to ignite a generated, not CREATED, fairy circle, or MUSHROOM ring. These will transport you directly into the Fae dimension. You can get back the same way, by finding another Mushroom circle within the new dimension
