I love the new cave generation, it's simply marvelous how much more "cavey" the caves feel with this update.
On a separate note, me and a group of pals looked at the new cave generation, and besides us being in awe at the massive caverns, we also noticed that diamonds looked almost too easy to find with the new generation, especially since caves can go 64 blocks deeper than in previous updates. Testing this, we found that it can easily take a couple minutes to get a full set of one of the best and most iconic materials in the game.
Diamonds are already pretty easy to find, with all the shipwrecks and desert temples that can be quite honestly easy to navigate. Once you go through it once, you never fall for the same traps again, and that can make playing Minecraft feel as if it is too easy. Add this onto it, and even moderately good players can get a full set of diamond armor within their first day (irl) of playing a new world.
I'm not saying make diamonds as rare as netherite, I'm just saying that the combination of structure loot and cave generation makes finding this "rare" resource consistently easy, making it seem less "rare" and more just "uncommon."
Changing a few loot tables and altering diamond generation sounds great to me, and in case I sound dumb and this is indeed going to change later, I would still like to mention that even before 1.17, diamonds were easy to get.
