What if glow lichen gave no light by default unless next to any lit-up block. This way massive dark caves still exist until the player discovers just one glow lichen, then by placing a torch near it, it lights up causing the glowing lichen around it to light up, which in turn lights up the whole cave.
This would be great because then caves remain mysterious and dark until the player acts, then they can watch the cave around them light up one glow lichen at a time. Way more interactive and wondrous than just a plain light source.
