what if when we spawned in the end, we spawned a bit of distance away from where the dragon is located? We could follow a compass through mountains and forest to the location of the dragon. We could also have a block that sets our respawn point in the end (like the one we already have for the nether) Maybe even on the way to defeat the dragon there were guards protecting the dragon that we had to defeat first. As for the terrain I was thinking something really magical looking like grass blocks that glow when stepped on, lots of vegetation, and illuminating mushrooms. The area surrounding where the dragon is located should give off burned\ evil looking vibes kind of like how the area is around the nether portals that spawn in the overworld.
