I have seen a lot of requests for a under ground village, but many of them lack a reason for the villagers to be there. So, maybe they use the underground village for protection.
The village stronghold would be a structure that spawns in large villages. There would be 1-4 villagers already living there, but the rest would move in during a zombie siege or pillager raid. The entrance would be to wood doors guarded by 2 caged iron golems. The main area would contain a bell and fountain. A hallway would branch off into 6 rooms, 2 bedrooms, 1 farm, and 3 workspace areas. The bedrooms would contain 4 beds and decorations like tables and potted flowers. The farm would be somewhat big and the west to the work areas. The strong hold would be made from stone bricks and buried under a small hill or mountain. There is a 1 in 10 chance that a mine of some sort would branch of from the end of the hallway, being built similar to an abandoned mineshaft. There is a 1 in 1200 chance that if a mineshaft doesn’t spawn, an end portal room could spawn. It would be guarded by four iron golems and lack a silverfish spawner. A priest would be found working there, attempting to find out how to open the portal and where it leads. The portal never spawns with any eyes of ender.
