Given the muted tan color of dripstone, adding brick and polished versions would make for a lovely new type of brick for builders. It would also give dripstone blocks more functionality beyond just being in dripstone caves. Of course, this could include any given type of polished/brick block, such as stairs, walls, and slabs.
Given that tan stones are a common masonry implement in the real world, I think this would help spruce up the current color schemes of stone-based construction. This could be implemented in similar fashion to andesite and similar stone types.
