The cave-ins could be caused by any mob that touches it, but the main reason would be to make cave-ins fun but preventable. Mostly bats and spiders would be the biggest threat. There, a use for bats! A new block called brittle stone would be added for this. Hidden among reqular stone, but with tiny cracks. When touched by an entity, (including arrows and snowballs) it creates a chain reaction breaking all brittle stone connected (great for restone traps). Above the brittle stone would usually be lava or a deep layer of gravel. perhaps the cave could be filled with eggs or sleeping creatures that, if bumped, would wake up and cause the cave to collapse!
Sort of a twist on the warden, but danger from where you step too close and how much noise you make that wakes them...
