The earth's crust is built out of different types of stone, which create layers. The branch of science working on it is stratigraphy. Below you can see the exemplary stratigraphic section, which shows different layers of stone. Layers of stone and their types may be different in different places.

Minecraft stratigraphy should be a bit different than in real life (for example, there would be no clay or basalt layers) and biome dependent (there is a layer of sandstone in the desert, but not in the mountains).
Layers don't mean replacing all the stone between specified Y levels, they mean that in specified Y levels deposits of certain stone type would be frequent (for example - between Y 10 and Y 30 granite deposits spawn frequently, diorite deposits are rare. Between Y 31 and Y 50 diorite deposits spawn frequently, granite deposits are rare). These deposits would be surrounded by regular Minecraft stone.
This change would help players in finding the types of stone they need. It would also add a bit of realism to Minecraft and make people aware of stratigraphy.
