Beetroot Crops drop more beetroots

I was farming beetroots recently and I noticed that each crop seems to drop one beetroot and a few seeds. Why only one?

All the other crops seem to drop multiple items on being harvested, but not beetroots. I think beetroot crops should drop more, especially seeing as this will help with trading with the farmers who ask for them.

I'm sure there are others who agree.
