    You could buy wood from him! Maybe he could go around planting trees too?

    Perhaps the workstation would be called the woodcutter or something. Perhaps its crafting recipe would be like a stonecutter, except that the stone is replaced with wood, and the iron ingot replaced with copper or flint.

    Here are some ideas for them

    They would wear a red plaid shirt and carry an axe all the time while they are working

    They could cut down the trees around themselves

    They would not attack, as they are scardey-cats, just like everyone else

    They would trade loads of wood related items, like the local biomes logs, planks, doors, etc...

    A sawmill block can be his workstation block
    We can also cut planks into slabs,stairs,etc like the stonecutter and they trade only the wood in the specific biome they live at. And lumber jacks dosent exist at desert villages unless devs add a new tree type in desert like the joshua tree

    With the addition of Shelves in Minecraft and it needing stripped logs for their construction, now more than ever, a "sawmill" block similar to the stone cutter block is actually needed. Creating stripped logs requires hitting with axe while the log is still in the world and can only be done one at a time. Having the sawmill/lumberjack would allow for this be created in batches quickly. It should include the ability to turn not just logs into stripped versions, but the "wood" block to be turned into stripped logs as well. The lumberjack profession would be rather simple to create and would likely be a clone of the stone cutter profession but just wood centric. 
    Please make this an update in the near future it is now an essential item for players and not just a "would be nice" item.

    I think planting saplings is a key feature for this villager.  It would work similar to how a farmer villager plants crops, but with appropriate rules for sapling placement to keep them from growing trees too close to buildings.  Currently, only players can place saplings, and that means most wood farming has to be done at least partially by hand.  Only a minority of wood types - oak (azalea), bamboo, and crimson and warped nylium - can be farmed fully automatically, and each require their own dedicated farm.  Wood is such an important part of the build palette that players who need it in significant quantities are often compelled to grind for it one way or another, whether that be clear cutting a forest, manually planting and harvesting, or going afk at semi-automatic farms that are often highly technical and don't generalize well to all wood types.  Having a villager that plants saplings would unlock passive fully-automated farming of generalized wood types, and be a boon for builders and redstoners alike.
