Blocks of Emerald should count towards your emerald amount.

Whenever you have blocks of emeralds inside of your inventory while trading with villagers, they will count as 9 emeralds instead of nothing. This would make trading a little more convenient when you have blocks of emeralds in your inventory and you wouldn't have to turn them back into emeralds.
