Peaceful mode is unbeatable.

After the villager and pillager update, peaceful mode became unbeatable due to the change in one of the cleric villager trades. They used to trade eye of ender, but now they trade ender pearls.

A simple solution would be to add blaze rods and / or blaze powder to the fortress and bastion loot table.

    There is actually a very tiny, tiny chance for the ender portal to be filled with all of the eyes of ender needed

    Well personally I think they should add blaze powder as one of the trades tbh

    While I'd give benefit of the doubt that this was an oversight, it would be very strange for a game based around being a fun relaxing sandbox to turn around and then bar players that are trying to avoid stressing about stuff the most any way of beating the game, and the content that comes with the outer islands. (Even in peaceful mode, an elytra is awesome)

    Yes, would be good to be able to complete the game in Peaceful even if the blaze rods/powder were very rare in loot tables or some other solution to enable Peaceful players to access them at all.
