My problem with Piglin Brutes is that they completely change how players can interact with Bastion Remnants by turning all other piglins hostile to the player. I think the Brute needlessly dumbs down our interactions.
Currently, there's a way to coexist with piglins, enabling more complex gameplay. A lot of us like to be able to "befriend" mobs, and to us, piglins were a fun Neutral version of the villager—as long as we were careful and clever, we could even live cooperatively with them close to indefinitely.
The purpose of the Brute appears to be to make bastions more difficult to exploit, but it also makes it impossible to have a complex relationship with a Bastion—if you go in, the piglins will all eventually become aggressive towards you no matter what you do. It limits our options in a way I think is boring and disappointing.
I think Brutes should exclusively inhabit treasure rooms, certain bastion varieties, or otherwise "areas you shouldn't go". Perhaps they only become hostile when the contents of spawned chests change for any reason (meaning they're alert to hopper trickery). Maybe even giving young piglins golden carrots causes Brutes to leave you alone.
I liked Bastion Remnants being a complicated place for the player. I like to interpret the piglins as sort of fellow survivors in a scary wasteland, and the Brute forces me to treat them purely as enemies. I hope we can keep the old kind of gameplay while still getting to play with this very interesting new mob.
