Light Gray--> Mink [Mink Wool]

Light Blue--> Cerulean; [Cerulean Bed] I chose Mink & Cerulean, 'cos they're unique names with no double meanings &'ll let players learn new color names.

Nether Wart--> Wart

Horse Armor--> Barding (term for horse armor) [Gold Barding]

Fence Gate--> Gate [Spruce Gate]

Wood Planks--> Planks [Oak Planks]

Pressure Plate--> Plate [Oak Plate]

Weighted Plate (Heavy)--> Heavy Plate [Iron Heavy Plate]

Weighted Plate (Light)--> Light Plate [Gold Light Plate]

Minecart Varients--> TNT-cart, Chest-cart, etc.

Double Tallgrass--> Tall-grass

Redstone Repeater--> Repeater

Redstone Comparator--> Comparator

Flower Pot--> Planter; (term for flower pot) since you can pot things other than flowers.

Stained Glass Pane--> Glass Plane [Yellow Glass Pane]

Magma Block--> Magma; since there'sn't a magma item.

Netherite Helmet--> Netherite Helm; 'cos it pretty much covers/protects the whole head.

Note Block--> Notebox

Slightly Damaged Anvil--> Cracked Anvil

Very Damaged Anvil--> Damaged Anvil

Monster Spawner--> Mob Spawner; since y'can set mobs to spawn that aren't monsters in them.

Block of Ore--> Ore Block; [Gold Block] it'll match the oddly named Lapis Lazuli Block.

Golden/Wooden Tool--> Gold/Wood Tool;[Wood Pickaxe, Gold Sword] considering there's "Wood Planks", not wooden planks in the game, then it shouldn't matter.
