Maybe, in the json file, you could define a block that the game uses instead of obsidian in the portal mechanics, and also maybe you could define a file path to a texture to use on the portal block on that new portal?
Also, maybe, when the game generate ruined portals, it could pick randomly between all defined portal-making'able blocks? Then you should also probably be able to define a block that replaces the nether themed blocks that generate around those portals?
