When removing larger areas of farmland, it would be a huge time-saver to be able to right-click farmland with a shovel to turn it back into dirt.
Jumping on the farmland (which doesn't even work 100% of the time, even when jumping on the center of the farmland) or placing and then removing blocks above it takes unnecessarily long. Removing the water around the farmland can also take more time than flattening it with a shovel, and sometimes you want to - or in case of a lake or an ocean, need to - keep the water in its place and just remove the farmland.
Using a shovel to turn farmland into dirt is a simple, fast, and intuitive solution. Players are already familiar with using a shovel on campfires to extinguish them or with using a hoe on coarse dirt to turn it into dirt. From a logical perspective, you would use the shovel to flatten the grooves, thus making it regular dirt again.
