I'm glad you added the Ruined Portals, because one of the things I think Minecraft has been missing for a long time is a way to instruct new players to figure out that you can construct a nether portal and go to another dimension. There's nothing intuitive about making a portal if you don't already know they exist, so my suggestion is to create some kind of hints/lore in the world that clues you how to make it. The ruined portal in itself doesn't say much, and since it contains crying obsidian and is always broken, it can hardly be activated by accident. And new players will never have seen multiblock structures before this, so I doubt most would expect anything to happen.
It could be as simple as a book in an occult basement of a village-like structure that talks about trying to get to the nether by setting fire to a "dark ring" or something like that. I'd prefer if it wasn't too specific, but just enough to intrigue new players to experiment with this. And if they stumble upon the Ruined Portals I'm sure they'll get the memo pretty quickly.
Cartographers could point to one of the structures that contains these clues, or it could simply be a diary in the chest near Ruined Portals.
P.S. I'd like something similar for summoning the Wither, as that is another "structure" that isn't clued in any way.
