With the use of scaffolding, primarily to help with building, I think that giving it another purpose would also be interesting. I would like to suggest the ability to use scaffolding as a block façade, where a block can be placed on the scaffolding and the scaffolding "mimics" the texture of the block. However, what would make this unique is that the functionality of scaffolding still applies (i.e. you climb up and down through it, and light is able to pass through it), this would make building far easier. The ability to climb through the façade would allow hidden areas to be easily concealed, and the ability for light to travel through it would mean that lighting up a build would no longer involve spamming blocks, which look out of place, or torches all across the build.
