The mechanic where Farmers interact with crops led me to be exited about a similar mechanic with fisherman for one reason, I believe The Fisherman Villager is the key in moving past the AFK fishing days in a way that the Minecraft community doesnt feel as if they have lost AFK fishing, but that they have gained the Catch of The Day Trade.
Here is how I think this could work:
This trade would change at least once per minecraft day.
It would only be accessable if the Fisherman had water access close enough to his work station.
During work hours in Minecraft time the Fisherman would go to the water for a bit until it caught somthing, which could be stored in slot or two in the Fishermans hidden inventory and maybe even a slot for a pole, so he could hold an enchanted pole for a better catch.
Whatever the fisherman caught most recently becomes the sell item for their Catch of The Day Trade.
Loot chances could be effected by a variable or two that determines how good a "fishing spot" is by assigning each biome a vallue, and each chunk a value for catch rate and/ or a luck value, but overall could be similar to the players fishing chances.
This would be a good way of expanding the capabilities of villagers, and would be a good reason for players to make Fishing Villages in strategic locations, and upgrade them to a point where maybe they even outperform afk fish farms.
With all this, it wouldnt be so sad to see AFK fish farming go
