A lot of food items serve the same purpose and give the same amount of saturation back. One of the few differences is that some players will have easier access to a certain food. What would make the food mechanic more varying would be to have a food that is much quicker to eat, allowing you to regain health potentially faster than other food items, or to bring your saturation up to full if it is only slightly down. Berries are small so this mechanic makes the most sense for them, though perhaps their saturation points should be lowered to balance the change.
Edit: Also want to point out that this would be a very good mechanic for keeping sprint up while being chased
