This is a diverse idea, it can be changed to more interesting solutions.
Main.
After some time change obsidian in the portals to crying obsidian not destroying portal.
After more time make nether portals collapsed.
It should looks like kind of explosion that destroy part of obsidian and make nether blocks around. So it will be similar to structure ruined portal.
Avoidance.
If player places End crystal (after this update rename it to the just crystal :D) on the uppon blocks of the nether portal, crystal will protect portal and replace all crying obsidian to the just obsidian. 
Would be good if in time of "repairing" of the portals there will be kind of great animation like crystal gives its energy to the portal.
I think need about 5 in-game days to see first crying obsidian and after it same time to the collapse.
Explanation.
What do you think - why all nether portals are destroyed? We can understand that all these portal was built by Piglins because of much gold. I will not make any theories - just seems long time ago piglins lived not in the nether only but got something like curse that make them zombie in overworld and all portals were collapsed.
- There are netherrack and magma blocks around portal - it looks like portals was destroyed by explosion.
- Some obsidian blocks are crying.
- It will explain why portals are destroyed.
- Crystals fit actually well into this update and so they have more application.
