Here is a concept image: 
The mob should spawn near lava, mostly underground. A player can gain its trust by feeding it a gem (either lapis, emerald, diamond, or quartz). It will then move towards gem ore blocks in an 4 block radius, 3 blocks up and 3 blocks down, even if they are behind other blocks. If the mob collides with a wall while looking for gems it will just sit there and turn to face the player all coy uWu. If there is no gem ore block it won't move and it won't eat again until after a delay.
Be careful because if it spots a gem on the floor, it will pick it up in its mouth and run away, even across lava pools. They can run across lava without taking damage, but they only do this when threatened. If left alone for a while, it will eat the gem and poop out a coal. If they take damage, they will drop the gem and run away further.
These are passive untameable mobs. You can use a lead or lure them around by holding a gem, but they are slow moving unless threatened. Feel free to take them back to your base and set up a coal farm. You can breed them by feeding them Prismarine Crystals.
I don't think this will be super overpowered as you need to sacrifice gems to make gems and you could just as well spend that time digging. This is more an idea for people that generally think mining is too scary. I think an interactive passive mob would really brighten up the experience of exploring caves.
