I've always been bothered by the lack of arthropods, and was overjoyed to see the bees added. One of my favorite biomes has long been the Dark Forest with its fantastical vibe that no other has. These two things combine into my inspiration for the Minecraft Rhino Beetle.
Arthropods in Minecraft are much larger then their real world counter parts (a trend I want repeated with the beetle). It would be a passive mob that attacks in a group when aggravated like Piglins but you could gain its trust like the fox or ocelot using mushrooms. When trusting, you can ride the beetle like a horse without the need of a saddle but it makes it so you fall off if you run into a wall or fall off a ledge higher than 3 blocks. Unlike the fox and ocelot, the beetle can be tamed with sweet berries making a permanent companion.
The beetle's health is 10 hearts, same as the player but the highest of all arthropods. Walking speed is quite slow, but speed increases when they charge in a single direction, whether because angry or being ridden. It will also trample crops, grass, flowers, and smaller mobs when at full speed, inflicting hefty damage to larger mobs. When not charging, it attacks with a headbutt that does an average amount of damage - like zombies but slower.
A beetle shell drop could be used to craft boots that give a charging effect when going in a straight line (like the turtle shell helmet concept).
