Now that the smithing table got a use (combining the diamond tools with netherite and keeping the enchantments), I think that, instead of leaving the fletching table without a use, it could be replaced with the target block. I can't see a use for it that we don't already have in the crafting table (making arrows/ tipped arrows is pretty intuitive, there's no need for another block) and also, we already have the lectern which is a villager workstation that emits redstone signal (I know you could add written books for others to see but if you're in singleplayer you probably don't use this feature).
I'd also remove the fletcher's house and add training grounds to the villages, using maybe hay blocks and and armor stands with damaged leather armor. We already have the cauldron which are placed outside and act as workstations, so it's not like every villager has it inside a house. I see it as paving the way for a future update where the villagers could protect themselves by shooting arrows, using swords and maybe potions (since there's already a code implemented for skeletons, zombies and witches).
