In the Bedrock and Legacy Console versions of the game, crouching while flying with an elytra extends the character's arm, similar to how Superman extends his arm while flying.
Though a relatively small feature, it adds to the charming humor that Minecraft is known for in addition to replacing a rather clunky-looking animation that now displays while crouching with an elytra.
