The problem with hunger bars and eating is that they can often become an annoyance instead of a goal. Saturation is nebulous and difficult to understand for many. Players should not have to eat constantly.
My proposal is to make single food items more powerful, while making the process of getting those food items harder (though not more time-consuming).
A player would need to eat a full meal (say 10 (out of 20) hunger points or 4.5 haunches) once or twice a day. The course of a day would decrease the hunger bar to about half its amount.
Saturation would be removed completely. Having several empty hunger points would be normal. Your health would continue to regenerate at 15 hunger points, you could still sprint, and you wouldn't starve.
Food mobs' AI would be improved. Mobs such as chickens and sheep would run when a player is near or had attacked them, while mobs such as cows and pigs would become neutral mobs that might also run or might attack the player. Hunting and killing would be a challenge. To compensate, they drop more items.
Mob spawning should also be updated (ie. increased). Farming mobs should make sense because it's more efficient than hunting, not because all the mobs in the area are gone.
Plant farming would be adjusted similarly to animal hunting - increase the time until actually getting the items. I would not increase the yields of plant farms. The amount of food one can get currently is too much. It would take about 15 days for a plant to mature.
