Olives
Olive stones should be found in naturally generated structures such as Woodland mansions, abandoned mineshafts, villages e.t.c. If you plant it on a non-tilled block, it will eventually grow into a three-block tall, three-block wide olive tree. When the olive tree has fully grown, the olives are punched off the tree and you will receive 1 - 5 olives. Once the olives have finally regrown, you may hit it again and the process keeps on cycling. If you mine the tree it will not become a dropped item, however, if you mine it with shears, you will be able to collect the tree itself (instead of waiting for the tree to grow).
When you put a regular olive in a crafting table, out you get a pitted olive and an olive stone that is in the crafting input area which you can take out. Villagers also trade pitted olives and olive stones with players.
You can't eat an olive, but, you can eat a pitted olive gaining 3 hearts, and 4 hunger points.
Oil
If you put a glass bottle and a pitted olive In the crafting table (the olive being above the bottle), you will get a bottle of oil. Oil can be used as fuel in a furnace to smelt 5 items.
It can also be found in pools deep underground at ore level. Oil in pools can be collected with a bucket then put into a glass bottle. You can walk in it, but you will walk at Soul Sand speed and you could swim in it, a little bit faster than Soul Sand. Finally, If you put oil on fire, it spreads rapidly, like bone meal on grass.
