Honey Blocks require 4 honey bottles to craft them and to turn them back require the block and 4 bottles to be placed in the crafting grid. Rather than doing that I believe it would be more useful if right clicking on a honey block with a bottle would reduce its size by a quarter and give you a honey bottle.
The side that is removed would be the one the player is facing. If done on a different side it would be removed unless it is in the same axis (Removing a quarter from the top would be able to have a horizontal side removed but the base would just remove the top). The removed sides would not be stick to any surface and when pushed by a piston parallel to the axis the empty side will face away from the piston. If honey blocks are chained in a line they will all try and become full blocks starting from the piston.
As well honey slabs (2 bottles used from the same side) and honey corners (2 bottles on one side and one use on another) can have regular slabs and stairs used to fill the block making it sticky on a few sides.
Breaking a honey block with part of it removed will drop a honey block with custom NBT stating which axis were removed. If a slab or stair is part of the honey block it will take priority and must be removed with the correct tool and will drop a combined honey block. These parts of a honey block can be combined back into a full ones and slabs ore corners can also be combined in the crafting grid similar to doing so in the world.
