Since you say the whale could teleport the enderman should have cages that stop the teleportation of something that way they could never escape.

Perhaps they could be offered chorus flowers to be ridden between islands for a short time?

Flying whales always seemed like a cool addition to flesh out the void in the end, some huge creature living between the islands. It could be rideable as well and possibly have resources to craft elytra. Possibly giving more functionallity to spyglasses in that it could make it easier to spot a flying whale (since they should be super rare)

Would there be a use in flying after it, over the void, with an Elytra--perhaps, as awful as this is, to poach it? It could drop some rare and new item, considering how difficult it would be to kill AND retrieve the loot before it vanishes forever into the void?

Poaching a whale is reprehensible on all levels, even if it is a flying space whale. It should drop nothing.

They appear after the death of the dragon and calmly, measuredly fly (“float” in the air), after the dragon is revived, they despawn again. While swimming, they sing and the sounds of the ocean are slightly heard near them (as in different videos on You tube). If you hit the whale, it just despawns, they can be lured by the chorus, saddled and floated. End whales that are not saddled are translucent, because They represent the ghosts of the animals that lived here before the appearance of the dragon. A saddled whale becomes opaque (as if materializing). The colors of the whales are in the style of the Edge, soft and calm. Endermen are afraid of them and teleport when they approach. Whales do not swim close to the cities of the region (are they afraid of shulkers and / or those who sailed on the ships of the End before?). This innovation will not be an imbalance in the extraction of elytra, because whales appear only after killing the dragon and do not move very quickly, but it will create an additional atmosphere in the End and make Steve and Alex return to the Land in between battles, construction and mining to think about the eternal, swimming on whales and listening to their thanksgiving singing for freeing from the dragon. This will be a logical addition to the backstory of the End, since there are ships in the land, so there is where to sail! Whales with their singing in endless space will very well approach the atmosphere of the region, after its release.
