It would be cool if pillager bases that are discovered and left undestroyed could overtime level up and increase in size and difficulty. More towers with bridges branching between them with barricades surrounding the whole structure could procedurally generate to create an interesting new type of dungeon for the player to explore. The bigger the camp gets the higher its level would be and a higher level outpost could offer a bigger enemy count plus could offer better loot. Maybe if a pillager outpost gets to a certain level there could be a new pillager themed boss fight that could trigger at the very center of the base.
