Mules in minecraft are bassicly donkeys, but with a different color.
Actual mules arent like this at all, they are faster and are about the same size as the mare (in this case the horse).
When breeding a donkey and a horse there should be a 65/35 chance for a mule/hinny (as hinnies in real life are much harder to breed than mules).
A mule will have the size and color of the horse (the mother), but a shaggier look (maybe add gray tones) and ears, manes and tail like a donkey. They should be a little bit slower than the horse it bred from and have a 2 high jump. As mules have the same strength as donkeys, they will keep the chest.
When a hinny is bred instead, the donkey will be the mother. The hinny will be the sane size as the donkey and the brownish color that mules have now, but receive the markings of the father horse (shaggier look though). The ears will be shorter than a donkey ears but longer than horse ears. The mane and tail will resemble that of the father, but again, shaggier look. A hinny will be as fast as a donkey, jump 2 blocks high and will be able to carry 24 items instead of 12 (hinnies are much stronger than mules due to their stronger hind legs).
Both mules and hinnies will be infertile so cant breed.
Since they cant procreate, the proposed buffs/changes seem like a fair bargain since you need 2 golden apples to get a mule.
