Last year, there was an update to Windows 10 Minecraft that made it so that players with large monitors couldn't make their UI smaller without manually having to resize their Minecraft window, even with the UI scale modifier set to the lowest.
This was reported as a bug by several members of the community, however, it was rejected, with developers claiming that it worked as intended.
The issue is frustrating for several reasons. When using a texture pack, the larger UI makes GUIs and items look pixelated. The chat window is also excessively large relative to the size of the screen.

This has been bugging me and others for a while now and I'm hoping something can be done about it.
