What I'm suggesting is basically the title. Different items might have a different set buoyancy than other items. For example:
-Obsidian may have a negative buoyancy, so it will sink
-Iron blocks might also have a negative buoyancy, but not as much as obsidian so it would sink slower
-Many wooden items would have varying positive buoyancy levels, so they will float, but not necessarily at the same speed
-An item with a buoyancy of -1 would sink at the same speed that an item would float at with a buoyant force of +1
-Some items could have a buoyant force of 0 (zero), causing it to neither sink nor float, but stay in position in the water
