So get this. I'm hosting my own minecraft server, and recently, I encountered a band of Illagers traveling. Armed with crossbows and axes, I approached them, tried to fight them and got absolutely destroyed.
My suggestion is to make it possible to join the illagers in their looting campaigns. One idea for this is the Diplomat illager, which follows behind their party. When you approach them, a text box appears saying something like "Halt, move no further or face your end," and you have two options to select, which are something along the lines of "I am not afraid to fight" or "I would like to join you." And so you could follow their party, or maybe even a messenger illager would spawn near your bed next time you went home, and would inform you of coordinates for attacks.
The reason for this, is that there's no good way to be a bad guy in minecraft. Either you kill all the villagers and get nothing out of it, or you be a goodie two shoes, so I really would want a way to join the illagers and loot villages.
On the other hand, there could also be a diplomat villager that hangs out near the town center, who would give you goodies for defending villages.
Another idea that goes along with this is a relations and ranking system, where you could be infamous to villagers, but a friend to illagers, so they won't attack you on sight, but villagers may send out partied to track you down and kill you. I know that all of this is probably way too ambitious for minecraft, but I feel like it could be a great way to expand gameplay.
TL;DR: Add a way to join illagers. Add interactive diplomat illagers and villagers, who you can properly perform tasks for, defend, or fight for. Maybe even add faction relations and rankings.
