While enjoying the recent update to Minecraft, I noticed that farmer villagers often desire a variety of crops, one of these being melons. Now the issue here that I see is that upon harvesting a melon, it breaks into the slices. Unless one uses a silk-town tool, this will always be the case. Why not either change the villager to accept melon slices instead or make it so harvest a melon does not break it and instead the player is required to place it into the crafting menu to break it apart.

I'm very sorry, but you are mistaken. Minecraft actually has a crafting recipe for melons. If you have a crafting table and put 9 melon slices in it. It will make the melon block you break to get melon slices. The crafting would be the same as how to craft an iron block with iron ingots. Here:
