How about there is a middle world between the nether and overworld that you have to pass through or at least have access to in order to make a functioning nether portal. This dimension would be called mystic dimension because it is a place between good and sinister. It has a new ore that can be used to make base potions for creating a ton of new potions and blocks to build with. And if you slept the item the ore gives you, it turns into an ingot that can craft armor that is slightly weaker than diamond armor but slightly stronger than iron armor. There can also be new plants that can be used as a food item or gathered and crafted for decoration. The trees would have gray-black logs/wood and a nice deep purple color for the leaves. The animals there could either kill you or leave you. Black animals are dangerous and purple animals are passive. The animals are similar to overworld mobs, but they drop items that can be used in potions, food source or as an item you can use for decoration. The water will be purple and black and give off slight black and purple particals and a small light source. There are random structures littered around the place, mostly witch towers. These are different witches though. They can use wepons as well as potions and their attire issue all purple, but the entity's skin is all black. There are 2-3 mystic witches per tower. In the tower there is loot like gold, mystic dust, with works like redstone but is for advanced enchanting like the way you would use lapiz. And obsidian. Not a ton of other things but those are the main things you can get from witch towers. The land is stuck in eternal twilight; half day, half night. The sky is a mezmerizing purple.
And another thing, mabey in the end you can also find dragon wings. They would be rare, but they would be near unbreakable and they would work like real dragon wings. You don't glide, you just simply jump while in air and you can face any direction you want and you will go there. They could also have their own custom animation
