Slimes regrow

Why

Unless you are willing to leave your safe home and wander for miles, wait for a full moon, find a ever rare slime chunk, or spend 3+ hours on a slime farm, Slime are simply hard to get.

How

Every 15-20 minutes slime simply want to regrow, they would do this by finding the nearest water source and consuming it, whether it be a cauldron or a water block the slime will take equivalent to one bucket and grow 1 size up. When a slime is at its biggest size that spawns in-game survival, it will explode into 4 small slimes. Also when slimes are in a 16 block radius of a beacon the time is shortened to 5-10 minutes

The beacon bit is, eh. With or without. But the slimes growing overtime, especially using a water source, yes please.
