Golems should be crafted at a Workbench, not as a Blueprint. You could even keep the pattern same. However, static turrets SHOULD be "blueprints", and required to be laid out flat.
Once a golem is crafted at a workbench, it should be equippable to "guardian" slot. Dead golems should take 24 hours to recharge instead of vanishing from inventory.
Some shields should affect Pet/Guardian items.
Hag type villagers (Mad Widow, Witch, Sleepy Crone) should have golems with a Vanishing curse.
For Mad Widow, it'ss an iron golem - she put husband's soul into the last iron her husband mined before dying.
For Snow Witch, it's Snow Golem.
For Blood Witch, it's an Abomination (Rotten Flesh golem - 5 Rotten Flesh in X shape, a jack-o'lantern in the top-mid cell). Abominations have properties of the Drowned, except with about 2x health and attack, but half the speed.
For a Sleepy Crone, it's Jack o'Golem (body of uncarved pumpkin, same layout ass iron)
All Golems can be fixed up by "feeding" them their Material, up to 1/N of the health (N being the amount of material - snow golems have 2 blocks, so regain 1/2 health; irons regain 1/4)
It should be possible to attach a carved pumpkin to an upright pumpkin stem to create a Chompkin - the crudest "turret" construct (think Mario's Chain Chomps, but with 7x7 block range around the stem). If destroyed, Chompkin always vanishes, with pumpkin exploding at half a Creeper's strength.
Another turret (blueprint) is a flare spewer, done similarly to a flat-laid Golem except the jack-o'lantern is in the middle rather than on the side. This turns the pumpkin into a carved pear squash (carved into a hound's face, with the narrow end being the nose), which stands on an iron cone and spews flares (minor fire damage, stackable to medium) at all hostile mobs and any players who attempt griefing
