I'm thinking of a use for having parrots besides looking like a pirate when perched on your shoulder.
What I'm suggesting is that parrots, when perched upon your shoulder, should be a warning system for nearby hostile mobs or players. When a hostile mob is within 32 blocks (Easy), 16 blocks (Normal), 8 blocks (Hard/core) it should make a ca-CAW sound. This would be pretty useful for creepers, who silently walk up to you (or dive-bomb).
However, if the parrot ca-CAWs on Normal or Hard difficulty, hostile mobs are more likely to chase after you, due to hearing the sound. Endermen could also teleport to near where you are due to hearing the parrot's sound. Also, if hostile mobs are too close, the parrot will fly to your home (or spawn point, should you not have a bed yet), in which there is a 10% chance that 10% of the mobs surrounding you will chase after it on Easy (5/10 on Normal, 2/10 on Hard/core).
[EDIT]
As Bilbo Baggins pointed out, parrots do imitate the mob that is near you. However, it should still squawk when a creeper is nearby, as they are completely silent mobs until it's too late.
