Gravity
In real life, grain is stored to keep it dry and keep out pests, like grain mites. To do this, grain is stored in silos where they are loaded from the top, and emptied from the bottom to make sure that the oldest grain is used first. As a builder and farmer in Minecraft, I think the game could benefit from a feature like this. It would also make the reduced fall damage feature make a lot more sense.
Spontaneous Combustion
I know its weird but in real life, if hay bales are not stored properly, they will spontaneously combust. Don't believe me? TLDR; "If hay is put into a barn or stack when it has more than about 22 percent moisture, not only does the hay lose forage quality, but it has an increased risk of spontaneous combustion." I think that having it in-game would be kind of ridiculous, but then again, Minecraft is kind of ridiculous as well! And if not in the main game, then in the educational version because it is interesting.
